South Korea – Gogigui Beef with Spring Vegetables, Kimchi & fresh BBQ Sauce



South Korea is a relatively young country with a very long past. It is part of  East Asia, a geographic region that nurtured one of the earliest cradles of civilisation, and its ancient heritage can be traced back to 8000 BC. Straddling the southern part of the Korean Peninsula, South Korea shares maritime borders with the Yellow Sea in the West, the Sea of Japan in the east and a land border with North Korea.

 

The roots of South Korean cuisine can be found in the agricultural practices and nomadic traditions of Korea and Manchuria. Key ingredients include cabbage, rice, beans, noodles, ginger, peppers, soy sauce, garlic and sesame oil.Spices are king in this flavour rich cuisine. Although the chili pepper is entrenched in South Korean cuisine it is not a native plant. Rather, is a Latin American import, introduced to Korea by Portuguese traders and missionaries in the 16th century.

 Gogigui Beef with Spring Vegetables, 
homemade Kimchi (Spicy Pickled Cabbage) 
 & 
 fresh BBQ Sauce


          


Gogigui Beef with Spring Vegetables
Ingredients:
·      Beef  - sliced thinly (the secret to the Gogigui is that the beef is thin enough to 
                                             cook very rapidly so all flavours are sealed in)
·      Mushroom cups
·      Trimmed asparagus
·      Sliced capsicum
·      Sliced sweet potato
·      Sliced pumpkin
·      Sliced zuchinni
·      Sliced onion

Method:
1.     Heat charcoal BBQ  till coals are glowing red
2.     Cover top of BBQ with a fine wire grill
3.     Place meat then vegetables on grill cooking until seared,
4. then turn over with chopsticks - you can squeeze fresh lime over food at this stage if you like


Kimchi – Spicy Pickled Cabbage

Ingredients:
·      1 chinese cabbage
·      salt
·      100gm dry chilli – hot
·      100gm dry chilli – mild
·      50gm fish sauce
·      ½ cup cooked rice
·      2 chopped spring onion
·      1 lemon skin rind
·      10 cloves garlic – crushed
·      5 tbs ginger – grated

Method:
4.     cut cabbage into 3 cm wide pieces
5.     sprinkle with salt & put a weight on top
6.     leave until done – about 4 hours
7.     drain water off cabage
8.     mix  dry chillis, fish sauce, cooked rice, spring onion & lemon ind in a food processor
9.     Mix together garlic, ginger, cabbage & ground chilli mix together


Korean BBQ Sauce

Ingredients:
·      1 apple
·      1 carrot
·      1 onion
·      3 cloves garlic
·      1 tsp ginger
·      3 tsp sesame seeds – ground
·      2 spring onions chopped
·      ½ cup soy sauce
·      ½ cup mirin
·      ½ cup sake
·      3 tsp honey

Method:
1.     grind apple, carrot, onion, garlic & ginger together
2.     mix together with all other ingredients
