Palau – Papaya Pork, Pineapple Sweet Potatoes & Coconut Rice




Republic of Palau. 
Geographically part of the larger island group of Micronesia, 
Palau is a union of 250 islands forming the western chain of the Caroline Islands 
in the western Pacific Ocean. The fruit bat is a favourite traditional Palauan food.

The Pacific Islander side of my family who were here  for this meal gave this dinner 
the thumbs up as being a typical & deliciously authentic islander dinner. 
This was a relatively easy meal to prepare and it was a lovely family affair with us all in the kitchen cooking  together. I recommend these dishes for summer socialising & for a dinner where you want to surprise your guests with a WOW taste factor but still want time to relax and enjoy yourself.

PAPAYA PORK

INGREDIENTS;
·      4  Pork scotch fillet
·      1  Ripe papaya
·      2 limes
·      1 tbs Peanut oil
·      1 Onion, halved and thinly sliced
·      1 large hot pepper, seeded and chopped
·      Peanuts -1/2 cup

METHOD:
1.     Toast peanuts & set aside in a dish
2.      slice pork  into thin strips, place in a bowl & top with juice of 1 lime
3.      take papaya & peel, de-seed, and chop, then place in a bowl & top with juice of second lime.
4.      Allow the pork & papaya to marinate a few minutes.
5.      In a pan, add oil and heat.
6.     Drain the pork strips, add into the pan and cook for 1 to 2 minutes on each side till seared.
7.     Add in the onion slices and pepper.
8.     Stir well to coat with the oil, then place lid and lower heat.
9.     Cook for 5 to 7 minutes, till vegetables tender but firm.
10.  Mix in the papaya chunks along with the lime juice marinade
11. Heat well.
12.  Serve hot topped with toasted peanuts.

NOTE: we served the toasted peanuts in a separate dish and guests added their own to their plates as we had a visitor at our table who had a nut allergy

PINEAPPLE SWEET POTATOES

INGREDIENTS:
·      6 small sweet potato,
·      1/2 cup butter, melted
·      1/2 cup sugar
·      1/2cup brown sugar
·      3tablespoons cornstarch
·      3tablespoons lemon juice
·      1can (9 oz.) crushed pineapple
·      3tbs grated coconut
·      100 gm grated cheese

METHOD:
1.     peel sweet potato and sliced in ¾ cm slice. Place in a large pot of cold salted water & gently bring to boil simmering until just cooked
2.     strain potato then lay into a buttered casserole dish
3.      Mix butter, sugar, brown sugar, cornstarch, lemon juice & crushed pineapple in a pot & gently bring to a boil for 2 minutes, stirring constantly
4.     Pour mixture over sliced sweet potato
5.     Top with half the cheese, then the coconut, then the reminder of the cheese
6.     Bake at 350ºF for 30 minutes

NOTE: this made a large tray of sweet potato bake: 5 of us only ate half of it! This is a great recipe to make for a party or large family gathering

COCONUT RICE

INGREDIENTS:
·      2 cups jasmine rice
·      4 cups coconut milk
·      1tsp salt

METHOD:
1.     wash rice in clear running water then place in lage pot with coconut milk.
2.     Bring slowly to boil stirring constantly
3.     Once rice is boiling turn heat back to lowest point put lid on the pot (do not remove lid after this point until ready to serve)
4.     cook covered rice for 10 mins
5.     turn off heat and leave pot on the cooling element for 10 more minutes
6.     let the pot just sit on the stove with lid on until ready to serve then turn rice out into a serving dish.
