BBQ Chimichurri Beef Steak.
which we served with
rice and an Avocado Green salad.
ARGENTINIAN BBQ STEAK WITH CHIMICHURRI MARINADE
INGREDIENTS:
· 1/2
cup (125ml) extra virgin olive oil
· 2
Tbsp chopped oregano
· 2
Tbsp chopped flat-leaf parsley
· 1
Tbsp chopped rosemary
· 2
Tbsp of sweet chilli sauce
· 1
Tsp sweet Spanish paprika
· 3
cloves garlic, crushed
· 3
Tbsp white wine vinegar
· juice
of half a lemon
· ½ tsp sea salt
· ¼
Tsp freshly ground black pepper
· 4
x Porterhouse steak about 2.5cm / I inch thick
METHOD:
1.
Mix all ingredients together (except for the steak) in a bowl
& leave at room temperature to infuse for about ½ an hour.
2.
Put steaks into a suitable dish to marinade in & pour
marinade evenly over them, turning several times to coat. Re-cover and refrigerate
for 1 hour turning over every 10 minutes or so.
3.
Preheat the grill or grill pan to very hot and cook the steak
for about 5 minutes on each side for medium-rare.
4.
Remove steak to a
plate & cover with
foil.
5.
Allow steaks to rest for 10 minutes
6.
thinly slice steaks across the grain & present on a
platter
