GRILLED LAMB
INGREDIENTS:
· 1.2 kg Lamb Chump Chops
· 2
cloves fresh garlic; crushed
· 2
sprigs fresh rosemary; chopped
· 4
sprigs fresh rosemary for the grilling
· extra
virgin olive oil
· salt
& pepper
METHOD:
1.
marinate chops overnight in olive oil, garlic, rosemary, salt
and pepper.
2.
grilled the chops for about 10 mins topped with fresh rosemary
sprigs then turn them & grill another 10 mins
3.
turn the grill onto low & keep grilling for another 10 mins, turning chops over regularly to make sure they are well cooked & the fat is
grilled off
SIDE DISHES:
Crushed Baby Potatoes with
Lemon & fennel
Gently boil baby potatoes, when
they are just cooked strain them, chop them into cm cubes, add butter, lemon
juice, fennel seed powder & cracked salt then turn until all is combined
Tomato & Feta salad
Cut tomato & fetta into cm
cubes, add olive oil & cracked salt, stir to combine
Cucumber and toasted Walnut salad with yoghurt dressing
Plain yoghurt, diced cucumbers,
lemon juice, dill, crushed toasted walnuts, salt.
Green Salad with Garlic &
Lemon Dressing.
Greens tossed with a dressing of fresh crushed garlic, olive
oil, lemon juice & salt
